SALTED ALMOND DOUBLE CHOCOLATE CHIP COOKIES

- 1 cup all purpose flour
- 1/4 cup cacao powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 2/3 cup coconut or brown sugar
- 1/3 cup melted coconut oil
- 1/4 cup warm water*
- 1 chopped Alter Eco salted almond chocolate bar
Preheat your oven to 180°C. Line a baking sheet with parchment paper and set aside. In a medium bowl, whisk together the flour, cacao powder, salt, baking soda, and baking powder and set aside. In a smaller bowl, mix together the sugar, oil, and water. Add the wet mixture into the dry and mix until incorporated. Fold in the chopped chocolate. Then, scoop about a tablespoon’s worth of dough for each cookie - make sure to flatten the cookies a bit with your palm, once they’re on the baking sheet. Bake the cookies for 12-13 minutes, making sure they don’t burn from the bottom or become too crispy.
*make sure the water is warm because cold water will harden the coconut oil once they mix together, creating the wrong consistency for the wet mixture. Just use warm water from the faucet as I do.
